Tequila Soused Shrimp

I am a HUGE fan of mexican food. I've been to Mexico several times and I can never get enough of the local cuisine.  Making mexican food at home doesn't have to be limited to tacos made with ground beef and taco seasoning from the grocery store. This recipe combines the amazing flavors of shrimp, tequila and lime. It's quick and easy and tastes great! I first had a dish similar to this at shack on the beach in Ixtapa/Zihuatanejo, Mexico. My husband and I went there for a getaway soon after we moved to California in the  late 90's.  At that time Ixtapa was quite the hidden Mexico getaway, there were very few tourists. Days spent relaxing by sea, evenings with great mexican food and margaritas/tequila galore.
