These muffins are hands down the recipe I make the most often. To our family, they are simply perfection. Chocolate and bananas, what's not to love? When I make these they don't last long and everyone always fights over the last one. You know, you can tell a recipe is well loved when the cookbook falls open to that page automatically as you flip through it. This one does! I adapted the recipe from the Creme De Colorado Cookbookby the Junior League of Denver. This cookbook has some of my favorite recipes ever in it. I have made dozens of recipes from the book and haven't run into a dud yet. That is rare! My husband and I grew up in Colorado and our family still lives there. Potato, Zucchini, Onion Frittata

Frittatas are a common meal in my kitchen. They are easy to make, taste great and are healthy. They are also a great way to use up and vegetable odds and ends that you have around. The best thing of all is how versatile they are, you can use any combo of veggies, herbs, cheese and meats if you don't want to go vegetarian. I usually serve them for a weekend breakfast but have been known to whip one up for a quick weeknight dinner as well with a salad on the side. This time I chose to useĀ  potatoes, onions, zucchini, parsley and parmesan cheese. If you are using potatoes, dice them small and saute them first until they are cooked through to make sure they don't end up crunchy. You will also need an ovenproof pan. Cranberry Cinnamon Rolls

I made cranberry cinnamon rolls this morning. I realize my drizzling technique could use some improvement but boy are they delicious! The cranberries were my husband's idea. They were a GOOD idea. I put dried cranberries in a bowl with some real maple syrup and left them to rehydrate overnight. My trusty bread machine did all the work of making the dough for me early this morning. I got my bread machine a long time ago, it might even have been a wedding present. So the poor thing has been cranking out bread and dough for us for around 19 years! Wow, that's amazing, I didn't realize I'd had it that long! I go in cycles with my bread machine. Some years I use it a lot and others it just collects dust in the pantry. I seem to be using it a lot lately. It's just so handy for whipping up dough for pizzas and rolls and loaves of bread.
